I haven't been feeling the Thanksgiving vibe yet. I made our traditional cornflake cookies (recipe below picture) tonight, which helped. It's not Thanksgiving without these little darlings. Too bad they are 6 Points per cookie.
Cornflake Cookies
1 12-oz bag butterscotch chips
3/4 c peanut butter
4 1/2 c crushed cornflakes
Melt butterscotch chips and peanut butter together in microwave (on 1/2 power in 2-minute intervals, stirring after each 2 minutes, and being careful not to overcook the mixture). Stir in cornflakes. Drop in clumps onto cookie sheets, chill until serving. Keep refrigerated.
This was my Grandma Thomson's recipe, something I didn't even know all the years I grew up eating them. It was only when I got the recipe to make on my own, that I found that out. I think about her every year now as I make them.

I saw this yesterday, and sorely lamented the lack of butterscotch chips here (they don't even have chocolate chips--it's barbaric!). I guess it made a significant impression, because I dreamed last night that I found butterscotch chips in the candy aisle of my favorite grocery store. I wish this dream would come true.
