I am so unadventurous in the kitchen, so when I make something good, it's blog-worthy!
This is an adaptation of my sister's beef and bean enchiladas. I used ground bison and it was delicious! (Recipe below picture.)
Bison and Bean Enchiladas
2 lb ground bison (browned, I usually add a little minced onion while browning)
1 can refried beans
1/2 t cumin
1/2 t chili powder
Combine the above for the filling.
8 flour tortillas
1 can red enchilada sauce
grated cheese
Spray pan with Pam and then cover bottom of pan with enchilada sauce (leaving most of it for on top). Warm tortillas in the microwave for 20 seconds so they roll better. Place 1/8 of the filling in each tortilla, roll up, and place seam down in pan. Pour remaining sauce over tortillas, top with cheese. Cover with foil and bake for 30 minutes at 350. Serve with sour cream, guacamole, tomatoes, shredded lettuce, etc.
